This flavorful gelatin-rich broth is made from grass fed marrow bones, with chunks of meat, knuckles & gristle. Chicken or Turkey broth is made with necks, feet tail bones, with meat. Pork is made with smoked pork hocks, and seafood with shellfish carcass! The grassfed bones are blanched to remove impurities, salted and heavily roasted with meat scraps on, tossed into industrial sized slow cookers with filtered water, a splash of apple cider vinegar, fresh & frozen produce such as lemongrass, celery, herbs, ancho, mushrooms, garlic, leeks, onions, bells, citrus, turmeric and ginger root. I prepare different flavors weekly, message me for this weeks flavor or request a flavor for the future. My broth is cooked slow and low for approximately 24- 48 hours before being jarred, lidded and cooled. Some times I go for 3 days depending on how many times the bones have been used but the first batch is always perfect at 2. The batches of Chicken, pork or Turkey Broth are blanched and broiled as well to create the most flavor possible with the least impurities.
According to Dr. Thomas Cowan, “In healthy, traditional cultures, when an animal was slaughtered, all the parts were put to use, including the bones, to make mineral-rich broth. Our modern diet, having largely forgotten the use of broth as the basis of our cooking, is estimated to have less than half the mineral content of more traditional diets. This rich mineral content and the fact that soup broths greatly aid digestion are just two of the many reasons why everyone should make soup broth a part of their daily diet.”
Bone broth naturally contains electrolytes, which are especially important to consume on the keto diet because the keto diet cuts out two big sources of natural electrolytes. Because of the way bone broth is made, the collagen is released from the bones, joints, and ligaments and into the broth itself. When you consume bone broth, you consume a natural, bio-available form of collagen. Beef bone broth contains mostly type I collagen, which is good for skin health. A serving (1cup) of bone broth typically contains between 0 and 2 grams of carbs. It’s an easy food to fit into the keto diet without increasing your carb intake. A reduction in carbs can cause some people to struggle with insomnia. Bone broth is rich in glycine, which has been shown to help improve sleep quality. In the winter months, fight the funk by heating a cup of this broth, add some pink salt & a lemon slice if needed ….and sip slowly while it heals you from the inside out.
- Although I have jarred this broth for storage at a commercial kitchen… once purchased if you do not consume within 5 days please divide into freezer safe containers such as ice cube trays, muffin pans, silicons, or baggies. I do not recommend that you keep the beef broth in these “freezer safe” jars since , I have found that the beef broth can still crack the jar when frozen.
